Lenten Meal Plan Monday Link-up – 1st Week of Lent

Lent doesn’t start until Wednesday but this week we have double duty with meatless meals on both Wednesday and Friday. I always tend to suffer with major headaches the first week of lent from lack of protein. I am going to try to not make that happen this year! 

Each week I am going to post several different types of recipes. Many of these recipes are ones I have found online via google searches or Pinterest and have not tried (but look simple enough) so try them at your own risk! I am hoping to also gather information about restaurants that are having specials for Lent.

Since the first week of Lent we have to double up due to Ash Wednesday and Friday being meatless I am going to share this awesome website I found that has TONS of recipes for 1 year of vegetarian cooking!

 

 

 

 

 

Another one of my favorite Lenten traditions is to serve Soup and Grilled Cheese. This is often called a “Simple Lenten Meal.” When I was in college at St. Mary’s University every Tuesday evening the brothers hosted dinner for the students and all through LENT they hosted simple Lenten meals of soup and sandwiches. Many consider this comforting food and anyone that knows me knows I LOVE soup! I literally have soup almost everyday (there the secret is out)! I’m also the only person I know that still eats ramen and isn’t in college. I grew up on the stuff and don’t think I’ll ever tire of it. 
P.S. you can also eat ramen on Friday’s during Lent if you eat the seafood variety (Oriental, Shrimp, etc.) and for extra Protein you can add Egg to it but that is another post :)

    Mmm, that looks wonderful! Thanks for sharing! You can also add a nice salad (maybe with some raisins and a few pine nuts) and be really full! Mmm!

      oh yeah we’re really bad salad eaters and when I put this together we didn’t have salad in the house but that is a good idea! YUMM

    Hi, Beth Anne! I’m visiting from our FB NFP group. This is a.nice blog you have here :-) You probably know but Lent technically begins at sundown on the Saturday after Ash Wednesday. Thursday, Friday and Saturday are called: X day after Ash Wednesday. Most consider it Lent anyway. I’m not sure why the Liturgical Calendar is set up as such. I’m sure a Liturgist could explain. I don’t have one on hand ;-)

      PS: I used to be Poor Clare. We never ate meat. There are plenty of ways to get your protein. An easy one is peanut butter or the like. Also, beans, eggs, cheese, yogurt and of course fish. Eating protein and a carbohydrate together should help your blood sugar stay alright. I know about headaches and all that. Remember, Jesus does not want you sick due to fasting or abstinence. That’s not the point, of course :-) It is better to take care of yourself and do what you can with fasting and abstinence. Whatever gets you closer to Jesus. Fasting and abstinence are a means to and end. Not an end in themselves. It was not easy for me not to fast as strictly as I wanted to in past years, due to what occurs. I get bad migraines if I don’t watch my blood sugar. God knows all this. Blessed and fruitful Lenten journey!

      That is just how the missal is written because the missal starts weeks on Sundays. But Ash Wednesday marks the beginning of Lent in the Roman Rite Church. Thanks for the tips on better ways to get protein!
