Lenten Meal Plan Monday Link-up – FINAL Week of Lent

We are officially in the LAST week of Lent. How did everyone’s meals go last week? Everyone has been posting such great ideas! I hope it has given everyone a lot of good ideas to try during LENT. I am going to use the same code each week. I tested it out and it let me add several links using my same email address. So if you posted a meal last week and want to again it should work. Several weeks ago I came across this easy recipe for Empanadas. I LOVE EMPANADAS! I really miss On the Border. They had such yummy empanadas. These pictures/recipe is for chicken empanadas but for LENT just make chicken or veggie empanadas. You could try shrimp/fish but I’m not sure how good they would taste.

Click on the picture to find the recipe for the empanadas and the empanada dough. You can buy pie crusts to use for the dough but I found it was REALLY salty and the homemade dough came out better.


Here are my pictures from when I made these empanadas. I made them several months ago so there is chicken in them but ignore that for lent ;) . One great idea with Empanadas is take a weekend to make 100 of them (or a lot) and then put them in freezer bags and FREEZE them and they make a quick dinner or a great snack for when you are in a hurry :)

Last week we were boring and had things that I already posted about (Egg Salad & Tomato Basil Soup). So here are some yummy meals from Pinterest.


Avocado Salad. This looks really different. I LOVE Avocado’s and want to try to make these someday.

This is a recipe for yummy grilled cheese and tomato basil soup. If you make the tomato basil soup make sure to use vegetable broth (if you plan on eating it on Fridays)!

These are Zucchini Oven Chips. I LOVE Fried foods. These looked really good. They have a similar recipe to how we fry our eggplant parm. I think the hardest part of this recipe will be finding zucchini’s of the right size. Most zucchini’s are really small. I may have to wait till the summer and they are more regularly in season.

Last week we were very low-key. We had vegetarian soups for Lunch and Eggplant for Dinner.
